Folding Serving Trays

We have these ugly folding serving trays that look sort of like this:
We actually use them fairly often when guests are over for football and basketball games. So I've been thinking I could maybe spray paint them white and put some kind of pattern on top like this:

Not sure if I do that with scrapbook paper and then lacquer it somehow? Or use some kind of fabric and cover it with something?

I found a girl on Design Sponge who used fabric and then used a clear vinyl on top. Not sure that's what I want for people to eat off of. I dunno??
